Instructions
1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and cook until softened, about 5 minutes.
2. Add garlic and red bell pepper, cook for another 3-4 minutes.
3. Stir in cumin, coriander, turmeric, and cinnamon. Cook for 1 minute until fragrant.
4. Add diced tomatoes, vegetable broth, and chickpeas. Bring to a simmer, then reduce heat, cover, and cook for 15 minutes.
5. Stir in spinach until wilted. Season with salt and pepper. Serve hot, garnished with fresh cilantro.
