
Vegetable Pulao Party

Instructions
1. Wash and soak basmati rice for 20 minutes, then drain.
2. Heat oil or ghee in a pot or pressure cooker. Add whole spices and let them release their aroma.
3. Add sliced onion and sauté until lightly browned. Stir in ginger-garlic paste and green chilies, cook for 1 minute.
4. Add mixed vegetables, turmeric powder, and salt. Sauté for 3-4 minutes.
5. Add the drained rice and gently mix. Pour in water and bring to a boil.
6. Cover and cook on low heat for 15 minutes (or 1 whistle in a pressure cooker), or until all water is absorbed and rice is cooked.
7. Sprinkle with garam masala and fresh coriander. Fluff with a fork before serving.
