Instructions
1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and cook until softened, about 5 minutes.
2. Add garlic, cumin, coriander, turmeric, paprika, and cinnamon. Cook for 1 minute until fragrant.
3. Stir in diced tomatoes, chickpeas, vegetable broth, carrots, zucchini, and apricots. Bring to a simmer.
4. Reduce heat to low, cover, and cook for 25-30 minutes, or until vegetables are tender, stirring occasionally.
5. Season with salt and pepper to taste. Garnish with fresh cilantro before serving.
