Instructions

1. Heat olive oil in a large skillet or wok over medium-high heat. Add the sliced mushrooms, bell pepper, and onion. 2. Cook, stirring occasionally, until vegetables are tender and mushrooms have released their liquid and browned, about 10-12 minutes. 3. Stir in the soy sauce, garlic powder, and smoked paprika. Cook for another 2-3 minutes, stirring to coat. 4. Season with salt and black pepper to taste. 5. While the vegetables cook, lightly toast the hoagie rolls. 6. Divide the vegetable mixture among the toasted hoagie rolls. Top each sandwich with 1-2 slices of vegan provolone. 7. Cover the skillet or return to low heat briefly until the vegan cheese has melted. 8. Serve hot.
