Instructions
1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, carrots, and celery; cook until softened, about 8-10 minutes.
2. Add minced garlic and cook for another minute until fragrant.
3. Pour in vegetable broth, diced tomatoes, rinsed cannellini beans, bay leaf, and oregano. Bring to a simmer.
4. Reduce heat to low, cover, and cook for at least 20 minutes to allow flavors to meld.
5. Stir in the chopped kale and cook until wilted, about 5 minutes.
6. Remove bay leaf. Season with salt and pepper to taste before serving.
