Instructions
1. Preheat oven to 375°F (190°C). Cook egg noodles according to package directions, then drain.
2. In a large skillet or Dutch oven, melt butter over medium heat. Add sliced mushrooms and cook until softened and browned, about 5-7 minutes. Stir in flour and cook for 1 minute.
3. Gradually whisk in chicken broth and milk, stirring constantly until the sauce thickens. Bring to a gentle simmer.
4. Stir in cooked turkey, cooked noodles, Parmesan cheese, parsley, sherry (if using), salt, and pepper. Mix until well combined.
5. Transfer the mixture to a 9x13 inch baking dish. Sprinkle bread crumbs evenly over the top. Bake for 20-25 minutes, or until bubbly and the topping is golden brown.
