
Tofu with Cashew Nuts
A delightful vegetarian stir-fry featuring crispy pan-fried tofu, crunchy cashews, and an assortment of colorful vegetables in a savory sauce. Hearty and satisfying.

Instructions
1. Heat 1 tbsp of oil in a wok or large skillet over medium-high heat. Add tofu cubes and pan-fry until golden brown and crispy on all sides. Remove tofu and set aside.
2. Add the remaining 1 tbsp of oil to the wok. Add cashews and stir-fry for 1-2 minutes until lightly golden. Remove and set aside.
3. Add bell pepper, onion, and minced garlic to the wok. Stir-fry for 3-4 minutes until vegetables are tender-crisp.
4. In a small bowl, whisk together soy sauce, vegetarian stir-fry sauce, sugar, water/broth, and white pepper.
5. Return tofu and cashews to the wok. Pour the sauce over the ingredients and toss to coat. Stir-fry for another 1-2 minutes until the sauce slightly thickens and everything is well heated.
6. Garnish with fresh cilantro and serve hot with jasmine rice.
