
Spinach Paneer Bliss
A creamy and subtly spiced curry featuring spinach puree with soft cubes of paneer cheese. A vegetarian favorite.

Instructions
1. Blanch spinach in hot water for 2-3 minutes, then immediately transfer to ice water. Drain and blend into a smooth puree.
2. Heat oil or ghee in a pan. Fry paneer cubes until light golden, then set aside.
3. In the same pan, add chopped onion and sauté until golden. Stir in ginger-garlic paste and green chili puree, cook for 2 minutes.
4. Add tomato puree, cumin powder, and coriander powder. Cook until the oil separates.
5. Stir in the spinach puree and cook for 5-7 minutes, stirring occasionally. Add a little water if too thick.
6. Add salt, garam masala, and the fried paneer cubes. Simmer for 5 minutes.
7. Stir in cream if using. Serve hot with roti or rice.
