
Spicy Edamame Stir-fry
A quick and vibrant stir-fry featuring nutrient-rich edamame, bell peppers, and a spicy garlic sauce. Excellent as a side or a vegetarian main with rice.

Instructions
1. In a small bowl, whisk together soy sauce, mirin, and sriracha/chili garlic sauce. Set aside.
2. Heat vegetable oil in a large skillet or wok over medium-high heat.
3. Add sliced onion and bell pepper, stir-fry for 3-4 minutes until slightly softened.
4. Add minced garlic and grated ginger, stir-fry for 1 minute until fragrant.
5. Add shelled edamame and pour in the sauce mixture. Stir-fry for 2-3 minutes, ensuring everything is well coated.
6. Drizzle with sesame oil, toss well, and serve hot.
