Instructions

1. In a small bowl, whisk together soy sauce (or tamari), rice vinegar, sesame oil, cornstarch, grated ginger, and minced garlic to create the stir-fry sauce. 2. Heat 1 tbsp vegetable oil in a large skillet or wok over medium-high heat. Add cubed tofu and cook, stirring occasionally, until golden brown and crispy on all sides (about 5-7 minutes). Remove tofu from the skillet and set aside. 3. Add the remaining 1 tbsp vegetable oil to the skillet. Add mixed stir-fry vegetables and cook for 5-7 minutes, stirring frequently, until tender-crisp. 4. Return the cooked tofu to the skillet. Pour the stir-fry sauce over the tofu and vegetables. Cook, stirring constantly, for 1-2 minutes until the sauce thickens and coats everything. 5. Serve immediately over cooked rice.
