Instructions
1. Cut the pork into 1-inch cubes. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
2. In a bowl, whisk together olive oil, lemon juice, minced garlic, oregano, salt, and pepper to create the marinade.
3. Add the pork cubes to the marinade, ensuring all pieces are coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours.
4. Preheat your grill to medium-high heat. Thread the marinated pork cubes onto the skewers.
5. Grill the skewers for 10-15 minutes, turning occasionally, until the pork is cooked through and lightly charred on all sides.
