
Shrimp Scampi with Zucchini Noodles
Succulent shrimp bathed in a garlicky lemon butter sauce, served over light and fresh zucchini noodles for a healthy, quick dinner.

Instructions
1. Season shrimp with salt, pepper, and red pepper flakes (if using).
2. Heat olive oil in a large skillet over medium-high heat. Add minced garlic and cook for 1 minute until fragrant.
3. Add shrimp to the skillet and cook for 1-2 minutes per side, until pink and cooked through. Remove shrimp from skillet and set aside.
4. Add white wine (or broth) and lemon juice to the skillet, bring to a simmer and reduce slightly, about 2 minutes.
5. Stir in butter and chopped parsley until butter is melted. Return shrimp to the skillet.
6. Add zucchini noodles to the skillet and toss gently with the sauce and shrimp for 1-2 minutes, just until warmed through but still firm. Do not overcook.
