Instructions
1. Preheat oven broiler to high. Heat olive oil in an oven-safe skillet over medium heat. Add onion and sauté until softened, about 5 minutes.
2. Add garlic and cook for 1 minute more until fragrant. Stir in diced tomatoes and oregano. Season with salt and pepper. Bring to a simmer and cook for 5-7 minutes, allowing sauce to thicken slightly.
3. Stir in ouzo (if using) and bring back to a simmer for 2 minutes.
4. Add shrimp to the skillet and cook for 2-3 minutes, just until they start to turn pink.
5. Sprinkle crumbled feta cheese evenly over the shrimp and sauce.
6. Transfer the skillet to the preheated broiler. Broil for 3-5 minutes, or until the feta is melted and lightly golden and the sauce is bubbly.
7. Garnish with fresh parsley and serve immediately with crusty bread for dipping.
