Instructions

1. In a large bowl, whisk together flour, water/broth, and baking powder until smooth. Let batter rest for 5 minutes. 2. Fold in shredded cabbage and chopped green onions into the batter until just combined. 3. Heat 1 tbsp vegetable oil in a large non-stick pan over medium heat. 4. Pour half of the batter into the pan, shaping it into a round pancake. Cook for 5-7 minutes per side until golden brown and cooked through. 5. Repeat with remaining batter. Transfer cooked pancakes to plates. 6. Drizzle generously with okonomiyaki sauce and vegan mayonnaise. Sprinkle with aonori and pickled ginger. Serve immediately.
