Instructions
1. In a small bowl, whisk together soy sauce, mirin, sake (or sherry), brown sugar, grated ginger, minced garlic, and sesame oil to create the teriyaki sauce.
2. Pat salmon fillets dry. Heat vegetable oil in a large non-stick skillet over medium-high heat. Place salmon fillets skin-side down (if applicable) in the hot skillet.
3. Cook salmon for 4-5 minutes on the skin side, until crispy. Flip the salmon.
4. Pour the teriyaki sauce over the salmon. Continue to cook for another 3-5 minutes, basting occasionally with the sauce, until the salmon is cooked through and the sauce has thickened to a glaze.
5. Garnish with sliced green onions and sesame seeds. Serve immediately with rice and steamed vegetables.
