Instructions

1. Steam or boil baby potatoes until tender. Blanche green beans in salted water for 2-3 minutes, then shock in ice water. Let both cool. 2. In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and pepper to make the vinaigrette. 3. Arrange mixed salad greens on a large platter or individual plates. 4. Artfully arrange the cooked potatoes, green beans, hard-boiled egg quarters, tomato wedges, cucumber slices, Niçoise olives, red onion, and capers on top of the greens. 5. Drizzle generously with the prepared vinaigrette. 6. Garnish with fresh basil or parsley before serving.
