
Roasted Cauliflower Tacos

Instructions
1. Preheat oven to 400°F (200°C). Toss cauliflower florets with 1 tablespoon of oil, chili powder, cumin, and garlic powder on a baking sheet. Roast for 20-25 minutes, flipping halfway, until tender and lightly charred.
2. While cauliflower roasts, prepare avocado crema: In a food processor or blender, combine 2 avocados, 1 lime's juice, 0.25 cup cilantro, minced jalapeño, and sour cream/yogurt. Blend until smooth. Season with salt to taste.
3. Warm corn tortillas in a dry skillet or microwave until pliable.
4. Assemble tacos: Fill each warm tortilla with roasted cauliflower. Drizzle generously with avocado crema. Top with diced red onion and remaining cilantro. Serve immediately.
