
Quick Shrimp Scampi with Linguine
A classic Italian-American favorite, this quick shrimp scampi with garlic, butter, and white wine is served over a bed of tender linguine.

Instructions
1. Cook linguine according to package directions until al dente. Reserve 1/2 cup of pasta water before draining.
2. While pasta cooks, melt butter (or heat olive oil) in a large skillet over medium heat. Add minced garlic and red pepper flakes (if using) and cook for 1-2 minutes until fragrant, being careful not to burn the garlic.
3. Add shrimp to the skillet and cook for 2-3 minutes per side, until pink and opaque.
4. Pour in white wine (or broth) and lemon juice. Bring to a simmer and cook for 2 minutes.
5. Add the cooked and drained linguine to the skillet. Toss to coat with the sauce. If the sauce is too thick, add a splash of reserved pasta water.
6. Stir in fresh parsley. Season with salt and pepper to taste.
7. Serve immediately.
