Instructions

1. Heat vegetable oil in a large skillet or wok over medium-high heat. Add shrimp and stir-fry for 2-3 minutes until pink and cooked through. Remove shrimp and set aside. 2. Add the day-old cooked rice to the hot pan, breaking up any clumps. Stir-fry for 2-3 minutes until heated through and slightly crispy. 3. Push rice to one side of the pan. Pour the beaten eggs into the empty space and scramble them until just set. Mix the scrambled eggs into the rice. 4. Add the frozen peas and carrots mix and the cooked shrimp to the pan. Stir-fry for 2 minutes. 5. Pour in soy sauce and sesame oil. Toss everything together until well combined and all ingredients are heated through. 6. Stir in chopped green onions just before serving. Serve immediately.
