
Quick Lentil Soup (Shorbet Adas)
A comforting and hearty Middle Eastern lentil soup, rich with warm spices and brightened by fresh lemon juice. This vegetarian staple is both nourishing and easy to prepare.

Instructions
1. Heat olive oil in a large pot or Dutch oven over medium heat. Add chopped onion and sauté until softened, about 5 minutes.
2. Add minced garlic and diced carrot, cook for another 3-4 minutes until slightly tender.
3. Stir in ground cumin and turmeric, cooking for 1 minute until fragrant.
4. Add rinsed red lentils and vegetable broth to the pot. Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes, or until lentils are tender.
5. Remove from heat and stir in fresh lemon juice. Season with salt and black pepper to taste.
6. For a smoother soup, use an immersion blender to blend a portion or all of the soup. Garnish with fresh parsley before serving.
