Instructions

1. Pat the shrimp dry with paper towels and season with salt and pepper. 2. Heat the olive oil in a large skillet (preferably a cast iron skillet) over medium-high heat. Add the sliced garlic and red pepper flakes. Cook for 1-2 minutes until garlic is fragrant and just starting to turn golden, being careful not to burn it. 3. Add the shrimp to the skillet in a single layer. Cook for 1-2 minutes per side, until pink and cooked through. Do not overcrowd the pan; cook in batches if necessary. 4. Deglaze the pan with sherry, scraping up any browned bits from the bottom. Cook for another minute until the liquid has slightly reduced. 5. Stir in the fresh parsley. Serve immediately with crusty bread for soaking up the delicious garlic oil.
