Instructions

1. In a small bowl, combine Monterey Jack cheese, cheddar cheese, and diced green chilies (if using). This is your cheese mixture. 2. Spread a thin layer of refried beans on one half of a tortilla, leaving a small border. Sprinkle a generous amount of the cheese mixture over the beans. 3. Fold the other half of the tortilla over to create a half-moon shape. Gently press down. 4. Heat 1 tablespoon of vegetable oil in a large non-stick skillet over medium heat. Carefully place 2-3 quesadillas in the skillet (without overcrowding) and cook for 3-4 minutes per side, or until golden brown and the cheese is melted and gooey. Repeat with remaining tortillas and cheese, adding more oil as needed. 5. Remove quesadillas from the skillet, cut into wedges, and serve immediately with salsa and sour cream.
