Instructions
1. In a bowl, combine soy sauce, mirin, sake (if using), grated ginger, and sugar to make the marinade.
2. Add the thinly sliced pork to the marinade and toss to coat. Marinate for at least 10 minutes (or up to 30 minutes in the fridge).
3. Heat vegetable oil in a large skillet over medium-high heat.
4. Add the marinated pork (without overcrowding the pan; cook in batches if necessary) and sauté for 2-3 minutes per side, until cooked through and lightly browned.
5. Pour any remaining marinade into the pan and bring to a quick simmer, allowing it to thicken slightly and coat the pork.
6. Serve immediately with shredded cabbage and hot rice.
