Instructions

1. In a wok or pan, cook the ground pork over medium heat, breaking it up with a spoon, until it's cooked through and all the liquid has evaporated. Do not add oil. 2. Transfer the cooked pork to a mixing bowl and let it cool slightly. 3. Add fish sauce, lime juice, toasted rice powder, thinly sliced red onion, mint leaves, chopped coriander, sliced scallions, and dried chili flakes to the pork. 4. Mix everything thoroughly, ensuring all ingredients are well combined. 5. Taste and adjust seasoning as needed, adding more fish sauce, lime, or chili if desired. 6. Serve immediately with fresh lettuce or cabbage leaves, best eaten scooped up with sticky rice.
