Instructions

1. Pat pork chops dry with paper towels. Season generously on both sides with salt, pepper, and paprika. 2. Heat olive oil in a large oven-safe skillet over medium-high heat. Sear pork chops for 3-4 minutes per side, until golden brown. Remove chops from skillet and set aside. 3. Add sliced apples and onion to the same skillet. Cook for 5-7 minutes, stirring occasionally, until softened and lightly caramelized. Add minced garlic and cook for 1 minute more. 4. Pour in chicken broth (or apple cider) and scrape up any browned bits from the bottom of the pan. Stir in Dijon mustard if using. 5. Return pork chops to the skillet, nestling them among the apples and onions. Bring the liquid to a simmer. 6. Cover the skillet and reduce heat to medium-low. Cook for 8-10 minutes, or until pork chops reach an internal temperature of 145°F (63°C). 7. Remove from heat, let rest for a few minutes. Garnish with fresh thyme if desired and serve.
