Instructions
1. In a powerful blender or food processor, combine the frozen pineapple chunks, grated fresh ginger, lime juice, and 2 tablespoons of agave nectar.
2. Blend on high, stopping occasionally to scrape down the sides. If the mixture is too thick to blend, add 1-2 tablespoons of water, one at a time, until it reaches a smooth, sorbet-like consistency.
3. Taste the sorbet and add more agave nectar if you prefer it sweeter.
4. For a soft-serve consistency, serve immediately.
5. For a firmer sorbet, transfer the mixture to an airtight container and freeze for at least 1-2 hours before serving. Scoop and enjoy!
