Instructions
1. Preheat broiler. In a medium bowl, whisk eggs with milk or cream, salt, and pepper until well combined. Prepare your chosen fillings.
2. Heat olive oil or butter in a 10-inch oven-safe, non-stick skillet over medium heat. Add any raw vegetables and cook until tender-crisp. If using cooked meats, add them to warm through.
3. Pour the egg mixture into the skillet over the fillings. Reduce heat to medium-low. Cook without stirring for 5-7 minutes, or until the edges are set and starting to pull away from the pan, but the center is still jiggly.
4. Sprinkle any cheese over the top if using.
5. Transfer the skillet to the preheated broiler. Broil for 2-4 minutes, watching carefully, until the top is set, lightly golden, and puffed. Remove from oven, let cool slightly, then slide onto a cutting board. Garnish with fresh herbs and slice into wedges.
