Instructions

1. Preheat oven to 400°F (200°C). Peel and cube potatoes into 1-inch pieces. Toss with 2 tbsp olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes, or until golden and crispy. 2. While potatoes roast, prepare the bravas sauce. Heat 2 tbsp olive oil in a saucepan over medium heat. Add minced garlic and cook for 1 minute until fragrant. Stir in diced tomatoes, smoked paprika, and cayenne pepper. Simmer for 10-15 minutes, stirring occasionally, until slightly thickened. Season with salt and pepper. 3. For the spicy aioli, combine mayonnaise, crushed garlic, lemon juice, and sriracha (if using) in a small bowl. Mix well. 4. Once potatoes are cooked, transfer them to a serving dish, spoon the bravas sauce over them, and drizzle with the spicy aioli. Serve immediately.
