Instructions
1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
2. In a separate medium bowl, whisk together the milk, egg, melted butter, and vanilla extract until well combined.
3. Pour the wet ingredients into the dry ingredients. Stir gently with a whisk or spatula until just combined. A few small lumps are fine; do not overmix, as this can lead to tough pancakes.
4. Heat a lightly oiled or buttered griddle or large non-stick skillet over medium-low heat. Pour about 1/4 cup of batter per pancake onto the hot griddle.
5. Cook for 2-3 minutes per side, or until bubbles appear on the surface and the edges look set. Flip carefully and cook for another 1-2 minutes until golden brown and cooked through.
6. Serve immediately with your favorite toppings, such as maple syrup and fresh fruit.
