
One-Pot Lemon Orzo with Shrimp

Instructions
Heat 2 tbsp oil in a large pot over medium. Cook shallot 2 min, add garlic, cook 30 sec. Add orzo, toast 1 min. Pour in broth, bring to a simmer, cook 10-12 min stirring often until orzo is tender and creamy. Meanwhile, heat remaining oil in a skillet over medium-high. Season shrimp with salt; cook 1.5 min per side. Stir lemon zest, juice, and parmesan into orzo. Top with shrimp and parsley.
