Instructions
1. Whisk miso, mirin, soy, and brown sugar. Coat salmon and rest 10 min.
2. Thinly slice cucumber, toss with rice vinegar + pinch of salt.
3. Broil salmon 6-8 min until lacquered and just cooked.
4. Serve over rice with cucumbers and pan juices.
