Instructions
1. Preheat oven to 400°F (200°C).
2. Halve eggplants lengthwise and score the flesh in a crosshatch pattern without cutting through the skin.
3. Mix miso paste, mirin, sake, sugar, and sesame oil in a small bowl.
4. Brush the cut side of the eggplants generously with the miso glaze.
5. Bake for 15-20 minutes, or until the eggplant is tender and the glaze is caramelized.
