Instructions
1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; cook until softened, about 8-10 minutes.
2. Stir in garlic and cook for 1 minute more until fragrant. Add diced tomatoes, cannellini beans, and vegetable broth. Bring to a simmer.
3. Add pasta shells and cook according to package directions, about 8-10 minutes, or until al dente.
4. Stir in fresh spinach and basil until spinach is wilted. Season with salt and pepper to taste.
5. Ladle into bowls and serve hot, garnished with grated Parmesan cheese.
