Instructions
1. Combine quinoa and vegetable broth (or water) in a saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until the liquid is absorbed and quinoa is fluffy. Fluff with a fork and let cool slightly.
2. In a large bowl, combine the cooled quinoa, chickpeas, diced cucumber, halved cherry tomatoes, thinly sliced red onion, and chopped fresh parsley.
3. In a small bowl, whisk together olive oil, lemon juice, minced garlic, and dried oregano. Season with salt and pepper to taste.
4. Pour the dressing over the quinoa and vegetable mixture. Toss gently to combine.
5. Serve immediately or chill for later.
