Instructions

1. Prepare quinoa according to package directions and let it cool completely. Dice cucumber, halve cherry tomatoes, thinly slice red onion, and halve Kalamata olives. Crumble feta cheese and chop fresh parsley. 2. In a large mixing bowl, combine the cooled quinoa, diced cucumber, cherry tomatoes, red onion, olives, and crumbled feta. 3. In a small bowl, whisk together olive oil, lemon juice, red wine vinegar, dried oregano, salt, and black pepper to create the dressing. 4. Pour the dressing over the quinoa and vegetable mixture. Add the chopped fresh parsley. Toss everything gently until well combined. 5. Taste and adjust seasoning as needed. Serve chilled or at room temperature.
