Instructions
1. Heat olive oil in a large skillet or pot over medium heat. Add chopped onion and cook until softened, about 5 minutes. Add minced garlic and cook for another minute until fragrant.
2. Stir in chopped sun-dried tomatoes, diced tomatoes, vegetable broth, oregano, and red pepper flakes. Bring to a simmer and cook for 5-7 minutes, allowing flavors to meld.
3. Add drained and rinsed chickpeas to the skillet. Stir in heavy cream (or coconut milk), salt, and black pepper. Simmer for another 5 minutes, allowing sauce to thicken slightly.
4. Stir in fresh spinach until wilted, about 2-3 minutes. Taste and adjust seasonings as needed.
5. Serve the creamy chickpeas hot over cooked rice or pasta.
