
Lentil and Vegetable Soup (Fakes Soupa)

Instructions
1. In a large pot or Dutch oven, heat olive oil over medium heat. Add onion, carrot, and celery. Cook until softened, about 5-7 minutes.
2. Add garlic and cook for 1 minute more until fragrant.
3. Stir in rinsed lentils, vegetable broth/water, diced tomatoes, bay leaf, and oregano.
4. Bring to a boil, then reduce heat, cover, and simmer for 35-45 minutes, or until lentils are tender.
5. Remove bay leaf. Stir in red wine vinegar. Season with salt and pepper to taste. Serve hot.
