
Lentil Soup (Harira-inspired)
A comforting and nourishing vegetarian lentil soup, reminiscent of the famous Moroccan Harira, rich with tomatoes, herbs, and spices.

Instructions
1. Heat olive oil in a large pot over medium heat. Add onion and cook until translucent, about 5-7 minutes.
2. Add garlic, ginger, turmeric, cumin, and cinnamon. Cook for 1 minute until fragrant.
3. Stir in rinsed lentils, crushed tomatoes, vegetable broth, and celery. Bring to a boil.
4. Reduce heat, cover, and simmer for 25-30 minutes, or until lentils are tender. Stir in parsley and cilantro during the last 5 minutes of cooking.
5. Season with salt and pepper. Serve hot with a squeeze of fresh lemon juice.
