Instructions
1. For the tzatziki: In a small bowl, combine Greek yogurt, grated cucumber, minced garlic, lemon juice, and olive oil. Season with salt and pepper. Stir well and refrigerate until serving.
2. For the kofta: In a large bowl, combine ground lamb, grated onion, minced garlic, fresh mint, fresh parsley, ground cumin, smoked paprika, salt, and black pepper. Mix thoroughly until just combined (do not overmix).
3. Form the lamb mixture into 8-10 oblong or cylindrical kofta shapes.
4. Heat a grill pan or large skillet over medium-high heat with a drizzle of olive oil. Cook the kofta for 3-4 minutes per side, or until browned and cooked through.
5. Warm pita breads according to package directions, either in a dry skillet, microwave, or oven.
6. Serve the lamb kofta immediately with warm pita bread and a generous dollop of homemade tzatziki. Garnish with extra fresh mint or parsley if desired.
