Instructions

1. In a large bowl, combine ground lamb, grated onion, parsley, minced garlic, cumin, coriander, paprika, salt, and pepper. Mix well until just combined. 2. Form the lamb mixture around wooden skewers into elongated cylinder shapes. 3. Prepare the tzatziki: In a separate bowl, mix Greek yogurt, grated cucumber, dill, and lemon juice. Season with salt and pepper to taste. 4. Heat a grill or grill pan over medium-high heat. Grill the kofta skewers for 3-4 minutes per side, or until cooked through and nicely charred. 5.
