Instructions
1. In a large bowl, combine ground lamb, grated onion, minced garlic, chopped parsley, cumin, coriander, paprika, cayenne (if using), salt, and black pepper.
2. Mix thoroughly with your hands until all ingredients are well incorporated.
3. Divide the mixture into 8-10 equal portions and form each portion around a skewer into an elongated shape.
4. Heat olive oil in a grill pan or prepare your outdoor grill to medium-high heat.
5. Grill the kofta skewers for 3-4 minutes per side, or until cooked through and nicely browned.
6. Serve hot with pita bread or a fresh salad.
