
Lamb Kleftiko
Flavorful slow-cooked lamb with herbs and vegetables, traditionally baked in parchment paper to seal in juices. A rustic and delicious one-pot meal.

Instructions
1. Preheat oven to 180°C (350°F).
2. Cut lamb into large chunks. Peel and chop potatoes, carrots, and onion. Mince garlic. Slice lemon.
3. In a large bowl, combine lamb, potatoes, carrots, onion, garlic, lemon slices, oregano, red wine, olive oil, salt, pepper, and bay leaves. Mix well.
4. Place a large piece of parchment paper and then foil over a roasting pan. Pour in the lamb mixture. Seal tightly to create a parcel.
5. Bake for 2-2.5 hours, or until lamb is fork-tender. Open the parcel carefully for the last 15 minutes to brown slightly, if desired.
6. Serve hot, directly from the parcel or scooped onto plates.
