Instructions
1. In a bowl, combine ground lamb, grated onion, minced garlic, cumin, oregano, salt, and pepper. Mix well to combine everything.
2. Heat olive oil in a large skillet over medium-high heat. Add the lamb mixture and cook, breaking it up with a spoon, until browned and cooked through, about 8-10 minutes. Drain any excess fat.
3. Warm pita bread according to package directions (microwave, oven, or skillet).
4. To assemble gyros, spread a generous amount of tzatziki sauce on each warm pita. Top with cooked lamb mixture, shredded lettuce, diced tomato, and diced cucumber.
5. Fold or roll up the pita and serve immediately.
