
Lahmacun (Turkish Pizza)

Instructions
1. For the dough: Dissolve yeast and sugar in warm water. Let sit 5-10 minutes until foamy.
2. In a large bowl, combine flour and salt. Add the yeast mixture and olive oil, mix until a dough forms. Knead for 5-7 minutes until smooth. Cover and let rise for 1-1.5 hours.
3. For the topping: In a bowl, combine ground lamb, onion, bell pepper, tomato, garlic, tomato paste, cumin, paprika, red pepper flakes, salt, pepper, and parsley. Mix well.
4. Preheat oven to 450°F (232°C) with a pizza stone or baking sheet inside.
5. Divide dough into 8-10 equal pieces. Roll each piece very thinly into an oval or round shape (about 8-10 inches).
6. Spread a thin layer of the lamb topping evenly over each dough piece, leaving a small border.
7. Carefully transfer a lahmacun to the hot pizza stone/baking sheet. Bake for 5-8 minutes, or until the edges are crispy and the topping is cooked.
8. Remove from oven, sprinkle with fresh lemon juice, and serve immediately, typically rolled up.
