
Italian Sausage Soup

Instructions
1. Remove sausage from casings. In a large pot or Dutch oven, heat olive oil over medium-high heat. Cook the sausage, breaking it up with a spoon, until browned. Drain any excess fat and set aside.
2. Add onion to the pot and cook for 5-7 minutes until softened. Stir in garlic and cook for 1 minute more until fragrant.
3. Return sausage to the pot. Stir in chicken broth, cannellini beans, diced tomatoes, oregano, basil, red pepper flakes (if using), salt, and pepper. Bring to a simmer.
4. Reduce heat to medium-low, cover, and simmer for 15 minutes to allow flavors to meld.
5. Stir in chopped kale and cook for 3-5 minutes, or until wilted. Taste and adjust seasonings. Serve hot, topped with Parmesan cheese if desired.
