Instructions
1. Prepare homemade hummus: Drain and rinse chickpeas. Combine chickpeas, tahini, lemon juice, minced garlic, olive oil, and salt in a food processor. Blend until smooth, adding water a tablespoon at a time until desired consistency is reached.
2. Dice cucumber, halve cherry tomatoes, slice Kalamata olives, and thinly slice red onion. Chop fresh parsley.
3. Spread a generous layer of hummus into the bottom of individual bowls or a large platter.
4. Arrange the diced cucumber, cherry tomatoes, sliced olives, and red onion over the hummus. Sprinkle with fresh parsley.
5. Drizzle with a little extra olive oil, if desired. Serve immediately with warm pita bread or crackers for scooping.
