Instructions
1. If using wooden skewers, soak them in water for at least 30 minutes.
2. In a large bowl, toss halloumi, bell pepper, zucchini, and red onion with olive oil, oregano, salt, and pepper.
3. Thread the halloumi and vegetables alternately onto the skewers.
4. Heat a grill or grill pan over medium-high heat. Cook skewers for 3-4 minutes per side, or until halloumi is golden brown and vegetables are tender-crisp. Alternatively, bake on a lined baking sheet at 400°F (200°C) for 15-20 minutes, flipping halfway.
5. While skewers cook, prepare the dip: In a small bowl, combine Greek yogurt, chopped mint, minced garlic, and lemon juice. Stir well and season with salt and pepper to taste.
6. Serve the halloumi and vegetable skewers hot with the mint yogurt dip.
