
Haemul Pajeon (Seafood Green Onion Pancake)

Instructions
1. In a large bowl, whisk together all-purpose flour, cornstarch/rice flour, cold water, egg, and salt until a smooth batter forms.
2. Heat a generous amount of vegetable oil in a large non-stick skillet over medium-high heat. Arrange a single layer of green onion pieces in the hot pan. Pour a ladleful of batter over the green onions to cover them.
3. Distribute a quarter of the mixed seafood evenly over the batter. Cook for 3-4 minutes until the bottom is golden brown and crispy.
4. Carefully flip the pancake and cook for another 3-4 minutes until the other side is golden and the seafood is cooked through. Repeat with remaining ingredients.
5. While pancakes cook, whisk together soy sauce, vinegar, sesame oil, and minced garlic for the dipping sauce.
6. Serve hot, cut into wedges, with the dipping sauce.
