Gyudon (Beef Rice Bowl)

Thinly sliced beef simmered in a sweet and savory sauce, served over a steaming bowl of rice. A classic Japanese comfort food.

Instructions

1. In a small pot or pan, combine water (or dashi), soy sauce, mirin, sugar, and grated ginger (if using). Bring to a simmer over medium heat. 2. Add sliced onions and cook for 3-5 minutes until softened. 3. Add the thinly sliced beef to the simmering sauce. Spread it out so it cooks evenly. Cook for 2-3 minutes, just until the beef is cooked through. Do not overcook. 4. Serve the beef and onions (with some of the sauce) over hot cooked short-grain rice. 5. Garnish with pickled ginger and chopped scallions if desired.
