1. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it apart with a spoon, until browned. Drain any excess grease. 2. Add diced onion and bell peppers to the skillet. Cook, stirring occasionally, until vegetables are slightly softened, about 5-7 minutes. 3. Stir in minced garlic, chili powder, cumin, and smoked paprika. Cook for 1 minute until fragrant. 4. Add diced tomatoes (with their juice) to the skillet. Bring to a simmer and cook for 5-7 minutes, allowing flavors to meld and liquid to reduce slightly. Season with salt and pepper to taste. 5. Garnish with fresh cilantro before serving.
